Happy hour on Grand Cayman tends to start earlier than you might expect and lean heavily on rum. Most places kick off between 4 and 5pm and wrap by 7, which lines up nicely with sunset. The drink specials almost always feature the local stuff: rum punch, mudslides made with rum cream, and cold Caybrew lager. On the food side, you will find conch fritters, jerk chicken wings, and fish bites on just about every happy hour menu. The real draw, though, is the setting. A cold drink tastes different when you are watching the sun drop into the sea from a deck on Seven Mile Beach or a tiki bar on the ironshore in West Bay.
For a true waterfront setup, Macabuca in West Bay is a local favourite. It is an open-air tiki bar built right into the limestone ironshore, with stairs leading down to the water. Happy hour runs Monday through Friday from 5 to 7, and the bar usually has a handful of cocktail specials alongside half-price appetizers from the Cracked Conch kitchen next door. The sunset here is hard to beat, and the reef is close enough that you hear the surf while you eat. In George Town, The Wharf has been doing a reliable evening happy hour for years. The deck hangs over the water, and once it gets dark the staff toss scraps to the tarpon that gather under the dock lights. It is a touch fancier than Macabuca but still feels like a real Caribbean night out.
For something right on the sand, Coccoloba Bar & Grill sits on the beach at the northern end of Seven Mile Beach, part of the Kimpton Seafire resort. You do not have to be a guest at the resort to grab a seat. Their happy hour runs from 4 to 6 and the frozen cocktails, margaritas especially, are the move. The tacos and ceviche are solid, and the view is pure Seven Mile Beach. Further south near the cruise terminal, Caboose is about as casual as it gets. Open-air seating right on the water, conch fritters that are some of the best on the island, and cold beer. It is the kind of place where you show up in flip-flops straight from the beach and nobody blinks. Happy hour here is less about drink specials and more about the fact that everything is already reasonably priced by Cayman standards.
If a proper drinks deal is what you are chasing, the bar at Bàcaro near the top end of Seven Mile Beach is tough to top. Their bar menu runs discounted drinks and small plates, Venetian-style cicchetti alongside spritzes and well-made negronis, from 5 to 7. The space is smart but not stuffy, and it sits on a canal off the North Sound with open sides that catch the breeze. Calypso Grill in West Bay, sitting above Morgan's Harbour, is mostly a dinner spot. But their bar opens at 5 and the early crowd catches sunset over the marina with a cold drink and a shot at the sticky toffee pudding before the dinner rush fills the place. The bar menu runs cheaper and portions are smaller than the dinner service, so it is a good pre-dinner move.
Most happy hours on the island run Monday through Friday, with fewer deals on the weekends. A handful of spots do Saturday happy hours, but Sunday is generally quiet. Getting there between 4:30 and 5pm usually means you beat the crowd and get the best seats for sunset. The 15 percent service charge applies to happy hour tabs same as any other, so factor that in. Dress codes at happy hour are what you would expect: swimwear cover-up is fine at Macabuca and Caboose, but throw on a shirt and shoes for Bàcaro or Calypso Grill. And if someone offers you a Cayman Lemonade, know that it contains no lemonade.
