Blue by Eric Ripert is the tasting-menu seafood restaurant inside The Ritz-Carlton, Grand Cayman, and the Caribbean's only Forbes Travel Guide Five-Star restaurant. Chef Eric Ripert's team serves a set multi-course menu built around seafood, with a formal dress code and reservations essential. The oceanfront dining room on Seven Mile Beach is open for dinner only, Tuesday through Saturday, and closes for a summer off-season before reopening in early November.
